さしみ
すし, in its strictest sense, means "vinegared rice." There are many すし items that do not have any fish. さしみ is the dish of raw meat (usually fish, but it can also refer to red meat). However, the combination of raw or cooked fish in the vinegared rice is also called すし. When you go to すしや (sushi restaurant), this is the representative dish.

りょうり means a "prepared meal." When you attach a country name in front of it, it specifies the nationality of the dish (i.e. にほん りょうり, フランス りょうり, メキシコ りょうり, etc.).

ちゅうか りょうり (Chinese dish), however, is slightly different. China is ちゅうごく, and ちゅうか means "of China." Some people say ちゅうごく りょうり, but ちゅうか りょうり is more common.

みず means "cold water" or "water at room temperature." (Some use its polite form おみず or おひや.) "Hot water" is おゆ (Never あつい みず, which is a contradiction in terms ("hot cold water")).
